MEAT RECIPE: Finger Licking Lamb

  • 1 tbsp of Mix & Blend Sage n Red Onion olive oil
  • 2 good quality Lamb Racks washed and trimmed
  • 1 – 2 tbsp of Mix & Blend Herb n Spice Wet Rub
  • 1 small Red Chilli – Yes! I said small, this dish has a little kick to it
  • 2 tbsp of Honey
  • A few sprigs of Fresh Mint – Looks good for presentation on the plate
  • Big handful of Mix Salad Leafs
  • 1 Red Onion
  • 1 Sweet Red Pepper
  • 1 Sweet Orange Pepper
  • Mix & Blend Lime n Mint Extra Virgin Olive Oil


  1. Give lamb a good old rub with the Mix & Blend Herb n Spice Wet Rub – Don’t be shy get your hands in there. What would be really nice, if you could leave to marinate over night and let the flavours do their work on the lamb racks.

  2. Add the 2 tbsp of honey and rub that in too.

  3. Get the pan nice and hot and pour in the 1 tbsp of Mix & Blend Sage n Red Onion. Start searing the lamb and get it nice and brown.

  4. Now throw it all onto a baking tray and pop into the over for around 10mins. Make sure the oven has been heated to 180°C. If you like your meat medium rare, 10mins will be fine, but if you like your meat well done like me then leave for 20mins.

  5. While the meat is resting for 10mins, I like to knock up a little salad to have with the lamb.

  6. Throw a good handful of mix salad leaves into a big bowl.

  7. Slice 1 red onion & 1 spring onion and throw that in.

  8. Throw ¾ of the fresh coriander in – Don’t forget to roughly chop the coriander.

  9. 1 Sweet red pepper & 1 sweet orange pepper.

  10. Drizzle some Mix & Blend Lime n Mint Extra Virgin Olive Oil.

  11. Now get your hands in there and give it a good mix around.

  12. Give it a taste and add a little sea salt and black pepper to suit your taste.

  13. Here comes the arty part….Place the salad onto a pretty platter and then slice the yummy lamb and assemble top of the salad.

Now doesn’t that look pretty but more importantly….YUMMY!”
