POULTRY RECIPE: Chicken & Prosciutto with capers & cream cheese filling

  • Mix & Blend Tomato and Lemon Olive Oil
  • 10 skinned cleaned Chicken fillets
  • 2 tbsp Mix & Blend Lemon n Ginger Dry Rub
  • 250g of Garlic & Chive cream cheese
  • 12 slice of good quality Parma Ham
  • Purple Broccoli
  • Fresh Oregano and Coriander


  1. Slice one side of the chicken fillet, creating a little pocket in the fillet.

  2. Rub the Mix & Blend Lemon n Ginger Dry Rub into the chicken fillets. Remember if you can marinate over night, you will get deep flavour to your chicken.

  3. Now take some of the garlic and chive cream cheese and fill the chicken fillet pocket.

  4. Take 2 slice of Parma ham per chicken fillet and wrap the chicken fillet.

  5. Rub some Mix & Blend Tomato n Lemon Olive Oil on each of the wrap fillets and place on a baking tray.

  6. Place the tray in the oven and make sure the oven is at 180°C.

  7. Give around 20mins – Make sure the chicken is cooked right the way through before serving
