POULTRY RECIPE: Duck with Noodles

  • 1 whole Duck
  • 200ml Mix & Blend Coriander n Red Onion Olive Oil
  • 2 Spring Onions – Try and slice into stripes
  • Small piece of Fresh Ginger – Grated
  • 3 Cloves of Garlic – Finely chopped
  • 2 tbsp Mix & Blend Dry Chinese Spice Rub
  • 100ml Chinese Cooking Wine
  • A dash of Soy Sauce
  • A dash of Oyster Sauce
  • A dash of Fish Sauce
  • 50g white sugar
  • 1 Small Red chilli – Chop this nice and fine
  • A good handful of bean spouts
  • Noodles


  1. Take the rib cage and spine bone out of the duck and chop up the rest of the duck.  Give the duck a good coating with the Mix & Blend Dry Chinese Spice Rub.  Make sure you get under the skin.

  2. In a nice hot wok add the 100ml of Mix & Blend Coriander n Red Onion Olive Oil and throw the duck in and get it nice and brown/ golden.

  3. Tip the duck and the juices in the bowl to rest.

  4. Take the other 100ml of Mix & Blend Coriander n Red Onion Olive Oil and add to the hot wok. Throw in the garlic, ginger and chilli. Now concentrate and keep stirring, because if you burn them your have to start again.

  5. Add a dash of oyster sauce, soy sauce, Chinese cooking wine, fish sauce and sugar. Give a good stir. At this point add in the bean sprouts.

  6. Add the duck back to the wok and cook down, it should look nice and rich, with a salty taste.
