VEGGIE RECIPE: Mushroom Wellington

  • 5 Large Mushroom
  • 4 tbsp of Mix & Blend Sage n Red Onion Olive Oil
  • Good handful of Spinach
  • 2 clove of Garlic – crushed
  • 1 small Onion – finely chopped
  • A little plain flour for dusting
  • A good pinch of fresh Thyme
  • Nice buttery Puff Pastry – 500g should be fine
  • 1 Egg
  • Sea salt and Pepper
  • Stilton Cheese ( you can use dairy free cheese)


  1. Right! Switch the oven on and get it nice and toasties at around 200ºC. Remove the stalks from the mushrooms.

  2. Heat half the oil in a large frying pan and sizzle the mushrooms for 3 mins until golden and cooked through – add a drop more Mix & Blend sage n red onion olive oil if needed. Lift the mushrooms out onto kitchen paper to drain.

  3. Place the same pan back on the heat with the rest of the olive oil. Fry the garlic and the chopped onion for a moment, add the spinach to the pan, and then cook for around 2 mins over a medium heat until completely wilted. Add a little sea salt and black pepper, then tip the spinach into a large sieve to drain.

  4. Throw a little flour and thyme on the worktop, then roll the pastry out to the thickness ½ inch.

  5. Get a saucer and a large side plate, cut out 4 saucer size circles (this is for the bottom) and 4 circles large side plate size circles (these will be for the tops).

  6. Place the 4 smaller circles on a baking tray and top each with a quarter of the spinach, making sure the pile of spinach in the centre of circle.

  7. Top the spinach with a slice of stilton cheese (or dairy free cheese), then a quarter of the mushroom mix,  and add some more cheese on top the mushroom.

  8. Brush the border to each circle with egg, then gently stretch the larger circle over the mushroom and spinach mix, trying not to trap any air, then press the edges together with a fork. Trim the edges with a knife if you want, then brush each generously with egg.

  9. Bake for 40 mins until golden, then leave to cool for a few mins before serving.
